How to tell that the Cuban restaurant you're in is REALLY authentic.

I can't imagine why anyone would want to start an inauthentic aka fraudulent aka sham Cuban restaurant. . .

Given that according to Wikipedia, Canada does have Taco Bell restaurants, I find that failure of imagination confusing.

In America, most mexican and almost all Chinese restuarants serve food that has more meat, American vegetables and fewer and different spices. It's prepared with lots of frying and in ways that reduce the amount of preparation time. With work, you can find a reasonably authentic restaurant if you live near a big city, but authentic food generally doesn't sell as well as inauthentic food.

So yeah, inauthentic restaurants are quite common. And given that good cuban food requires pain-in-the-ass things like marinating the puerco asado for days and cooking the meat for ropa vieja until it falls apart, I'm sure cutting corners is tempting.
